Simple Tzatziki

I LOVE TZATZIKI. It’s so delicious, tangy, creamy, cool; it’s the shiz.  I LOVE it as a veggie dip. And it’s great with pita bread (if you can handle bread – I try to avoid it, or at least aim for gluten free). Inspired by True Foods crudite appetizer, my new go to app for get-togethers will be a colorful assortment of veggies with homemade olive tapenade and this super easy homemade tzatziki dip.

  1. 1 Cup Greek Yogurt
  2. 1 English Cucumber
  3. 2 TB Fresh Dill
  4. 1-2 cloves Garlic
  5. Salt & Pepper
  1. Deseed the cucumber with a spoon, then grate. Squeeze the juice out of the grated cucumber with a paper towel. Next, stir the cucumber into the yogurt. Add 2TB chopped dill, and 1-2 cloves minced garlic to the mixture. Add salt and pepper to taste. Combine all ingredients. Play around with the ratios of dill and garlic to find your sweet spot.
  1. This is fantastic with raw veggies like broccoli, carrots, celery, radish, peppers, cucumbers, string beans, raw asparagus.
